Soft, comforting muffins using just bicarbonate of soda and yoghurt for lift.
Ingredients (Makes 10–12 muffins)
- 2–3 ripe bananas (approx. 250g peeled)
- 75g melted butter or sunflower oil
- 100g soft brown sugar (or caster sugar)
- 1 large egg
- 1 tsp vanilla extract
- Âľ tsp bicarbonate of soda
- 2 tbsp plain yoghurt
- ½ tsp cinnamon (optional)
- Pinch of salt
- 180g plain flour
- Optional: chopped nuts, dark chocolate chips, or raisins
Method
- Preheat oven to 180°C (160°C fan) / 350°F / Gas Mark 4. Line a muffin tin with paper cases.
- In a large bowl, mash the bananas with a fork until mostly smooth.
- Stir in the melted butter/oil, sugar, egg, vanilla, and yoghurt.
- Add the bicarbonate of soda, cinnamon (if using), and salt. Mix lightly.
- Fold in the flour until just combined – do not overmix.
- Spoon batter into muffin cases (about Âľ full). Add toppings if desired.
- Bake for 18–22 minutes, until golden and springy to the touch.
- Cool on a wire rack — or enjoy one warm straight from the tin.
